The Rocket Express rapid cook oven utilizes a combination of convection heat, high speed impinged air, bottom infrared and microwave to reduce cook times by more than 80%, with chef-quality results. Rocket Express ovens are equipped with a removable catalytic converter, which breaks down grease-laden vapours, allowing for ventless operation. Up to 16 inch pizzas can be coked in the Rocket Express. The top and bottom heaters are independently controlled. The door has double glass fitted for easy cleaning. There is a manual mode for on the fly cooking. Because of the use of impinged (forced) air, together with the infra red heaters, cooking times are up to 50% faster than traditional pizza ovens, therefore saving time and energy in the process.
